B2B Cooking! EZ Teriyaki Meatballs/Chicken Skewers

Continuing our Back to Basics Down & Dirty Cooking tips, this week it’s EZ Teriyaki Meatballs and Chicken Skewers. I made this last week on a night that I didn’t feel up to cooking—it was fast and fabulous.
Assembly time: FAB 5 MIN
Cook time: about 15-20 mins (also can be done in a crockpot on low for a few hours).
You need:
1 Family size bag of frozen meatballs
2 packages of chicken skewers
2 bottles of quality teriyaki sauce
2 bottles of orange sauce
Rice (Calrose sticky rice or Minute Rice) to feed your family
dinner21. Combine two bottles of quality teriyaki sauce (we like Very Teriyaki) with two bottles of orange sauce (it gives an unexpected kick and sweetness) into a large bowl and stir together.
2. Empty half to 2/3 a family-size bag of frozen meatballs and 2 packages of chicken skewers (both available at Costco) into their own 9 x 13 baking dishes. Pour the sauce over the top of both meatballs and skewers. Cook both dishes at 375 degrees until meatballs are hot inside (the skewers will be done five minutes before the meatballs).
Meanwhile, if you have a rice cooker, start the rice (takes about 20 minutes and the sticky rice IS THE BEST!) If not, put a child in charge of making Minute Rice on the stove top. Add corn or steamed Asian vegetables on the side and you’re set.
This fed our family of nine with lots left for lunches and late-night snacking.
