This week’s guest post is from Nichole Van, not only my friend (name dropper, I know) but an international photographer and a darn fine chef (despite what she says). She makes easy meals that look and taste amazing. I’ve sampled said salmon and IT IS SCRUMPTIOUS!! Enjoy~
A little backstory: A couple years ago, I decided to finally lose all that extra baby weight and finally fit into that pair of cute skinny jeans. And not just the typical diet-then-gain-it-back thing, but a real lifestyle change that would ensure permanent weight loss. So I channeled all my cooking energy into creating healthy, lower calorie but still uber-tasty food; food that I would be happy to eat for the rest of my life. And it’s been astounding! Not only did I lose that baby weight (and have 3 pair of cute skinny jeans in my closet that actually fit, yay!), but I’m healthier and have more energy than I thought possible. So here is one of my favorite recipes that I came up with along the way. For me, a good recipe is one that is easy, fast and tasty while still being healthy. This one fits all the criteria!
Yummy Salmon (or it’s super chef-y name…Blackened Salmon with Mango Salsa
So for starters, I’m sorry that this recipe is kinda vague on amounts. The simple truth is that it doesn’t really matter how much of any ingredient you do (or don’t) include. The recipe is ridiculously forgiving and you can easily tweak it to your taste. So this is what you need:
Salmon filet with all the bones removed, rinsed (doesn’t matter how big or small, skin or no skin)
olive oil
salt
lemon pepper
cayenne pepper
Emeril’s Seasoning or Season Salt
Paprika (just regular, not smoked)
Herbs de Provence or Italian Herb Blend
Mango Salsa (I just purchase it from my local grocery store, but it’s fairly easy to find. You just want a sweet, fruity salsa).
Preheat the oven broiler on high heat. Put some tinfoil on a cookie sheet (just for easy clean-up). Place your salmon on the tin foil. Drizzle with olive oil (not completely necessary, but it makes me feel more gourmet) and then just sprinkle with the remaining ingredients. How much you put on depends on what you like. Personally, I put just a shake of everything except the paprika, which I put on more generously. That’s it. Place under the broiler (about a 8-10″ away) and broil until done (usually about 10 minutes). Serve topped with the mango salsa. I like to serve it with a simple side salad with some kind of low-cal fruity dressing.
