Easy Lasagne
[est. prep time: 5 minutes post boiled noodles]
9 lasagne noodles, cooked to directions
1 (24 ox.) carton of cottage cheese
Mozzarella cheese to taste (about 3-5 cups)
1 (24 oz) jar spaghetti sauce (Paul Newman’s is yum)
PLACE 3 long cooked noodles lengthwise and side by side in a 9 x 11 pan (so it covers the bottom of the pan). Place dollops of cottage cheese randomly over noodles, with spaces in between the dollops.
DOLLOP (love that word) spaghetti sauce the same way (only over the spaces this time). Spread two to three handfuls of mozzarella cheese over the entire layer. Repeat for all three layers, making sure to finish with cheese on top. Bake at 350 degrees for 30 minutes or bubbling. Add Easy Fancy Salad (see below) and rolls and you’re set!
Easy Fancy Salad
[est. time: 5 minutes]
2 (11 oz.) bags of spinach leaves
½ to 3/4 cup of sliced almonds (to taste)
1/4 to ½ cup of poppy seed dressing (to taste)
1/2 to 1 cup of sliced strawberries (you guessed it…to taste)
ADD all ingredients to a big beautiful bowl and mix gently. Serve!
